Day Two & STILL loving it! I'm starting to figure things out, but it is also information overload! I pray that I'm a quick learner! I'm already starting to think how I want to decorate my office...I've never had an office before (just a classroom), so this is going to be fun!
Tonight was a relief...I didn't have to cook dinner! Since I didn't get home until 5:30, the last thing I wanted to think about was what to cook. But, our church had their Fall picnic (it was actually inside b/c of the rain). We had yummy BBQ & listened to a great classic rock cover band. I really can't tell you how much I LOVE OUR CHURCH! Our pastor is awesome!
So....I haven't posted any recipes in a while But, I thought I'd post my staple snack recipe. This is a recipe from my aunt, and I pretty much make it every week. It's called Mexican Corn Dip. I love eating it with tortilla chips...it's so yummy!

Picnic, Rain, & Corn Dip
MEXICAN CORN DIP:
2 Cans Mexicorn (drained)
3/4 Cup Mayo
1 can Rotel (drained)
1/2 the can of Rotel...filled with water
6-8 Chopped Green Onions (I usually only use 6)
3/4 Cup Sour Cream
3 Cups Shredded Cheddar Cheese
Mix all the ingredients in a bowl & refrigerate over night.
**Note- I usually put it in a bowl that has a lid that can be sealed over it
Okay, I'm SOOO exhausted. I'm about to call it a night!
...FALL IS ALMOST HERE!!
